Here's another recipe from Chef Jim Hunt, chef/owner at Fiddler's Restaurant in Steinhatchee, FL   It uses the knuckle meat from Stone Crab claws.   Easy to prepare, and sooooo good!    A great appetizer, but make plenty because it will go fast!!!!
