Start out with fresh, shell-off, de-veined shrimp.  Large size.  Enough to feed the crowd you're having, so I'll leave the quantity to you.

Toss them in your favorite cajun seasoning --- I've just discovered a new spice blend called Redneck Pepper company and they make a Seafood seasoning blend that's really good for this recipe.

Let them sit in the spices while you get a skillet hot. 

Add a little bit of olive oil once the skillet is hot, and sautee the shrimp with a teaspoon of garlic for a minute or less.  Just enough time to get them about halfway cooked NOT pink throughout.

Remove the shrimp, and deglaze with a couple of good splashes of GOLDEN SHERRY.

Then add a couple pats of butter and about 3/4 to 1 cup of heavy cream.

Let this reduce for a couple minutes, STIR it regularly.   Add a little more of the spice blend and the juice of 1/2 lemon.   If you have some fresh thyme, now would be a good time to add a few freshly chopped leaves.

Once the cream has reduced by about half, add a the shrimp back in and toss to finish cooking the shrimp

Serve over noodles or by itself with some crusty french bread.
